Today it’s pouring down with rain, and I can hear the wind howling outside, so I thought I’d bake something for the exciting lead-up to Christmas. I’ve been very inspired by all the food scrolling I’ve done on Pinterest. The problem is that I was over-inspired and wasn’t exactly sure what I wanted to bake, so I made two batches – one of Milky Muffins and one of Milky Brownies.
Servings:
- 12 miniature muffins & 15 miniature brownie pieces.
Ingredients:
- 3 eggs
- 90g white chocolate
- 90g milk chocolate
- 1/2 cup caster sugar
- 150g unsalted butter
- 1 1/4 cups plain flour
- 1/2 teaspoon baking powder
- 12 strawberries
- Whipped cream
Method to make Christmas Milky Brownie Muffin:
- Preheat the oven to 170°C and grease your muffin tray and cake pan.
- Melt the butter and white chocolate over medium heat or in the microwave for one minute and stir using a wooden spoon. In a mixing bowl, place in 1/4 cup caster sugar, 75g butter, 1 1/8 cups of plain flour, 1⁄4 teaspoon baking powder, one whole egg and one egg white (save the yolk). Create a well in the centre and stir in the white chocolate mixture with your wooden spoon.
- This time, melt the butter and milk chocolate and repeat the same with the rest of the ingredients. With the egg, use one whole egg and one egg yolk. Again stir the mixture with your wooden spoon.
- Now, spoon a layer of milk chocolate and a layer of white chocolate into the muffin tray. It’s completely up to you which one you want on the top and bottom. When the muffin tray has been filled, pour the remaining mixtures into the cake pan and give it a light swirl to create a marble effect.
- Put both trays into the oven for ten to fifteen minutes. When the timer is up, take them out of the oven and cool them in the trays for another five minutes. Remove them from the trays and cut up the brownie from the cake pan into little square 2cm² pieces; however, make sure you allow the muffins to completely cool because you’ll be putting dollops of cream on top, and you don’t want them to melt.
- Once the muffins are cooled, cut the stems off the strawberries so that they have a flat surface. Apply a little whipped cream onto the top of the muffins keeping in mind that the weight of the strawberries will spread the cream out. Apply a little cream onto the strawberries’ top to create little Santa hats. Then place the strawberries onto the muffins.
There you have it, little milky brownies and Christmas muffins – perfect for the festive season. Let me know what you think of them and if you plan to create them. A word of advice: if it’s summer where you are, like in Australia, apply the cream and strawberries just before serving them. Otherwise, you’ll end up with a dribbled Santa hat!
